SBS: Sunday Baking Session

Haven't cooked real meals for ages!
so this Sunday I tried to give it my all to cook a complete meal
(minus dessert)
spent 2 hours in the kitchen, keeping coming back and forth from stove to my crappy oven.
but finally I finished everything just in time for lunch

Beef salad with vinaigrette dressing

Grilled cajun chicken

Recipe:
Beef Salad
Beef was marinated a day before with chopped coriander, salt, black pepper, garlic, and red onion, drizzled with olive oil.
Grilled beef according to ur preference (rare-med-well)
for the salad, it really goes by feeling with no real recipe
50%-50% olive oil and a good balsamic vinegar
salt-black pepper to taste.
For the vege: i used a packet of mixed salad, 1 packet of baby spinach, a handful of halved baby tomatoes, and a can of shredded corn.

Stuffed mushroom
1 packet of button mushroom, stem removed and chopped
half handful of chopped bell pepper
2 small cloves of chopped garlic
a handful of ground beef
2 tbsp of milk
a handful of breadcrumb
stir fried chopped mushroom stem with chopped garlic, bell pepper, and ground beef.
remove from heat, mixed with milk and breadcrumb.
stuffed mushroom cap with the mixture (be generous!)
grilled on pre-heated oven of 200'c for 15-20mins until brown.

Homemade fries
sliced potatoes to the thickness u like, boiled it halfway done and freeze for a night.
This will leads to non-soggy fries. :)
batter mixture:
1 cup of flour
2 tsp of organic spiced salt (onion and garlic)
pinch of black pepper
3/4 tsp of paprika powder.
1/2 cup water (or more)
mixed everything in a bowl but make sure add the water gradually until a good consistency batter (a bit thick)
dip sliced potato in the batter and deep fried until golden brown.

Cajun Grilled Chicken
I marinate the chicken a day prior, spiced with cajun powder, 2 cloves each of bashed garlic and red onion, salt, black pepper and drizzled olive oil.
Discard garlic and red onion after marinade, grilled.


The other day, i dunno what to do and i made this cupcake and I don't remember the recipe for this one coz i totally made it up lol. at the end i just put a chunk of chocolate in the cupcake batter before putting it in the oven to get the chocolate melt effect at the bottom :D
